If there is one Cordilleran delicacy that people remember, it is the “etag”.

Etag is salted pork meat that Jordan Mang-osan, a reknowned solar artist, also playfully calls “solarized meat” because of its final process of sun drying.

Jordan Mang-osan demonstrates how etag is prepared and discusses its significance in the Cordilleran way of life for the 11th Tam-awan International Arts Festival.
